Ingredients:
1/2 Cup Olive Oil or Butter
4 Cups sliced onion
40 oz Beef Broth
3 tblspns Sherry
1 tsp thyme
Salt & Pepper to taste
6 slices of Provolone Cheese
1 cup of diced Swiss cheese
1/4 cup grated Parmesan cheese
6 slices of French bread (or any bread lightly toasted)
2 gallon stock pot
6 oven-safe soup bowls
baking sheet
foil
Process:
- Heat olive oil or Melt butter in stock pot.
- Add onions and stir constantly until translucent.
- Add broth, thyme, salt and pepper.
- Simmer for 30-40 mins.
- Pre-heat broiler.
- Spread foil on baking sheet.
- Arrange bowls.
- Ladle soup into bowls.
- Place piece of bread onto of soup and place a slice of Provolone on the bread with some pieces of Swiss cheese and a sprinkle of Parmesan cheese.
- Play baking tray with bowls of soup in oven a broil until cheese melts and starts to bubble.
Remove, cool and serve.
